- 1 1/2 cups Cashews
- 3 tbsp Nutritional Yeast
- 1/2 cup Oat Milk ( or any non dairy milk)
- 1 tbsp Lemon juice ( fresh or bottled )
- 1/4 tsp Garlic Powder
- 1/4 tsp Salt ( I prefer Pink Himalayan )
- Sprinkle as desired Trader Joes Everything Bagel Seasoning Blend
Step one
In order to develop the creamy texture it is important to soak the cashews overnight! I soak my cashews in a bowl of room temperature water over night and then revisit them once they have soaked long enough. The longer they soak the softer - for cheese that is firmer you can skip soaking all together or soak for less time ! ( I have done both )
STEP TWO
Once you have soaked you cashews you will pour them into a food processor. I personally use a NINJA, any other food processor such as a Vitamix will work as well. Combine cashews, oat milk, lemon juice, all seasonings and blend. You may notice it may call for more liquid - you will want to process or blend the ingredients until it appears light and fluffy as seen above.
STEP 3
Spread your now creamy Cashew "Cheese" on anything you desire ! I went with a toasted multi grain English muffin- Then sprinkle as much Everything Bagel seasoning as you desire and VOILA ! ENJOY :)
TIPS
I like to play around with the amount of national yeast added for cheesier flavor adding more yeast will assist with that. Also if you don't not have lemon juice available, Apple cider vinegar can substitute lemon.
